When the cold weather arrives, homemade vegetable soups are a warm, comforting way to soothe your gut, decrease inflammation, and get those daily servings of vegetables.


Even better, you can mix your favorite vegetables, seasonings, and health-boosting superfoods (like turmeric) together, and place leftovers in the freezer to enjoy on busier days!


For an anti-inflammatory, health-boosting dinner you'll love, try this Turmeric Broccoli Ginger Soup for the perfect way to warm up after a cold, wintry day.


Inflammation-Fighting Turmeric
Broccoli + Ginger Soup

 

SERVES: 6-8 PEOPLE

 

INGREDIENTS

  • 8 cups broccoli (about 2 heads, cut into 1 inch florets)
  • 6 1/3 cups vegetable stock
  • 2 tbsp butter (or vegan spread)
  • 1 1/3 tsp pink himalayan or sea salt
  • Pinch of black pepper (or to taste)
  • 1 1/2 tbsp ginger (fresh, shredded finely)
  • 3 1/2 cups leeks (roughly chopped)
  • 1 tbsp sesame oil (or olive oil if preferred)
  • 1 1/3 tsp turmeric (ground)


INSTRUCTIONS

  • In a medium to large pan, heat and melt butter (or vegan spread) on medium heat
  • Add the leeks in first and cook thoroughly for roughly 7-8 minutes, stirring occasionally, until leeks are fully cooked.
  • Move the cooked leeks to a slow cooker (roughly  5 or 6 quarts) and add the broccoli, ginger, salt, turmeric, pepper, oil, and vegetable stock.
  • Cover and cook on a low setting for 3-4 hours, or until broccoli is fully tender.
  • Place into a blender and blend until soup is creamy and completely smooth (or to preference)


TIPS

  • Be careful not to overcook. This can cause the soup to taste a bit too bitter.
  • Add a dollop of sour cream, non-dairy sour cream, or plain greek yogurt on top for added creaminess. Dip bread into soup and enjoy!
